A Colour Source from the Nature: Black Carrot
Dark coloured vegetables usually contain more antioxidants. Black or red carrot is also extremely rich in anthocyanin, which is an antioxidant.
Besides its known features as being source of vitamins and minerals, black carrot is also an exceptional natural colour source.
Black carrot is nutritious, but it is also an important product for industrial food production due to its colour values. The determinant of this feature of black carrot is the seed structure of the product.

Konfrut continues to conduct contracted agriculture projects with the black carrot farmers, and to support them for producing and extending this miraculous resource of nature.
The initial plantation areas of the year are Konya (Ereğli) and Konya (Karapınar) regions. The products called “low-coloured” are grown in these regions.
Hatay (Kırıkhan) is the region where the carrots called “high-coloured” are planted.
Within the scope of the Black Carrot Contracted Agriculture Project, the contracts are renewed each year since black carrot is a seasonal product.
Konfrut Farmers continue their production operations with the support of Konfrut’s Expert Field Teams.

Due to the limited availability of black carrot seeds with a high colour scale in the market, Konfrut procures these seeds itself. The seeds obtained from this production are then provided to farmers for black carrot cultivation.
As black carrot is a seed-grown crop, it requires careful monitoring and attention until germination. This water-intensive crop undergoes pesticide analysis in laboratories, and all results are documented.
The harvested products are processed in industrial production facilities and then supplied for use as natural colorants.
